Blue Cheese Shortbread

These are a cross between a cookie and a cracker.  A little sweet with lots of great cheese flavour.  Perfect for a cheese plate or for anyone without a sweet tooth.  The recipe only calls for a little cayenne but I like to add more for a nice bite.

Blue Cheese Shortbread

7 Tbsp butter
7 Tbsp blue cheese
2 Tbsp grated parmesan
2 Tbsp sugar
1¼ cups flour
¼ tsp salt
pinch of black pepper
pinch of cayenne

Cream the butter and blue cheese.  Add the parmesan, sugar, flour, salt, pepper, and cayenne and mix until combined.  Roll into a log, wrap with plastic and refrigerate for at least 30 minutes.

Cut the log into ¼” thick slices.  Bake at 350° for 10 to 12 minutes until just starting to colour.  Best eaten the same day they’re baked.
