Oat Bars

These are too good just to bake at Christmas, so bookmark this recipe!  Hot from the oven they’re an amzing dessert, cooled a perfect lunchbag cookie.  And they’re a great way of using up bits of jam hanging out in the fridge, though my preference is for something tart like raspberry or red currant.

Oat Bars

1 ½ cups flour
1 ¼ rolled oats
1/3 cup sugar
1/3 cup packed brown sugar
¼ tsp baking soda
½ tsp salt
½ cup walnuts
¾ cup unsalted butter, cubed
1 cup jam

Preheat the oven to 350°.  Put the walnuts on a baking sheet and bake until light brown, about 10 minutes.

Combine all ingredients but the nuts and jam in a mixing bowl.  Mix until everything is fully combined and forming clumps.  Stir in the walnuts.  Press ½ of the cookie mixture  into a parchment lined 9″ pan.   Add the jam and spread evenly.  Top with the remaining crumbs of cookie mixture, pressing down lightly.

Bake for 35 to 40 minutes, until golden and slightly puffed.  Cool then cut into squares.
